Aranchini Balls

Aranchini / Arancini
More correctly known as "Arancini di riso", they are rice croquettes with ground meat fillings, popular in Sicily as a snack food. At home they can be easily made with leftover risotto, which is then crumbed and deep fried, flavored with tomato paste, peas and containing pieces of mozzarella cheese in the middle. When eaten hot the cheese is scrumptiously melted inside.
