Chili and Lime Peanuts

When travelling through the Queensland Atherton Tablelands, we tried these chilli and lime peanuts, a new flavour combination for us. They were great, so here is a recipe to make them so you can enjoy these flavours too. We have since found out that chilli and lime peanuts are a popular beer snack from elsewhere in the world.
Ingredients (makes 2 cups)
- 2 cups raw peanuts
- 1 tablespoon olive oil (not extra-virgin)
- 2 teaspoons coarse salt
- 1 teaspoon sugar
- 2 teaspoons fresh lime juice
- 1 pinch lime zest
- 1 teaspoon hot pepper sauce
- 3/4 teaspoon cayenne pepper
Method
- Mix peanuts, olive oil, salt, and sugar in bowl to coat evenly.
- Scrape mixture onto baking sheet.
- Roast nuts for 20-30 minutes in 350 degF (180 degC) oven until fragrant and beginning to darken, stirring occasionally.
- Place nuts in a large bowl. Add lime juice, lime zest, hot pepper sauce, and cayenne pepper - toss to coat.
- Once cooled store in airtight container in refrigerator.
