We first came across this dish when we were served it in the unlikely place of Munich Germany by our German host. Although we have made it many times since, we have never succeeded in getting it as good as the first time. Maybe it was those German cheeses.

Method

  1. Cook the beets till tender, approximately 30 minutes. Drain most of the juice from the pot, but keep half a cup or so of the red water.
  2. In a separate pan cook the onion and garlic in the oil until the onion is translucent.
  3. Add the Arborio rice and cook for a few minutes longer.
  4. Add half the stock and stir regularly while cooking.
  5. Chop the beets into small cubes then add to the pan with the red water.
  6. Add the remaining stock and continue stirring.
  7. Add more water if the risotto gets a little dry and the rice is not done.
  8. When the rice is soft, turn the element down to low, add the cheeses, pepper and parsley.
  9. Serve and garnish with a little grated parmesan
