Niçoise Salad

Here is a recipe for Nicoise Salad, pronunced 'ni-swaz', a great looking, nutritious and fresh summer salad. We had the privilege of having this dish served to us in a cafe in the small village of Tola on the French island of Corsica. Bon appetite!

Ingredients (serves 4)

• 1 iceberg or other lettuce, washed and roughly broken
• 1 punnet of cherry tomatoes, cut in half
• 175 g fresh green beans, trimmed and blanched
• 4 eggs, hard boiled, shelled and quartered
• 425 g can tuna in spring water, drained
• 2 large potatoes, cubed and steamed
• 1/2 spanish onion, sliced thinly
• 1/4 cup small black olives
• freshly ground black pepper

Dressing

• 2 tbsp extra virgin olive oil
• 2 tbsp white wine vinegar or lemon juice
• 1 clove garlic, crushed
• 1 tsp Dijon mustard
• freshly ground black pepper

Method

1. arrange drained lettuce on 4 plates
2. divide remaining ingredients evenly onto each plate
3. whisk ingredients of dressing together. Drizzle over salad and serve
