Niçoise Salad

Here is a recipe for Nicoise Salad, pronunced 'ni-swaz', a great looking, nutritious and fresh summer salad. We had the privilege of having this dish served to us in a cafe in the small village of Tola on the French island of Corsica. Bon appetite!
Ingredients (serves 4)
- 1 iceberg or other lettuce, washed and roughly broken
- 1 punnet of cherry tomatoes, cut in half
- 175 g fresh green beans, trimmed and blanched
- 4 eggs, hard boiled, shelled and quartered
- 425 g can tuna in spring water, drained
- 2 large potatoes, cubed and steamed
- 1/2 spanish onion, sliced thinly
- 1/4 cup small black olives
- freshly ground black pepper
Dressing
- 2 tbsp extra virgin olive oil
- 2 tbsp white wine vinegar or lemon juice
- 1 clove garlic, crushed
- 1 tsp Dijon mustard
- freshly ground black pepper
Method
- arrange drained lettuce on 4 plates
- divide remaining ingredients evenly onto each plate
- whisk ingredients of dressing together. Drizzle over salad and serve
