Truffles are found under trees

Truffles are a uniquely flavoured edible fungi. They grow underground on the roots of trees, under a symbiotic relationship with the trees because they cannot make their own food.

They are very expensive, mainly because they are a prized exotic ingredient flavoured by gourmet chefs, and there is a limited supply.
They occur naturally in regions of France and Italy, and the harvest from these crops are decreasing for various reasons. There are other places around the world that are using scientific knowledge to produce more truffles, supplying an ever increasing public demand.

One place they are now producing truffles for the world market is Manjimup, in Western Australia.
